Dragon Fruit Cheesecake

Looking to wow friends & family with a delicious dessert, but don't want to spend hours in the kitchen? Well we've got you covered with the easiest, yet most delicious No Bake Dragon Fruit Cheesecake!

For the Base:

150g Crushed biscuits – We recommend digestives or ginger snaps but feel free to experiment!

3 tbsp melted butter or coconut oil

A pinch of salt

For the Cheesecake Filling:

300g cream cheese

100g Greek yogurt

1 tsp Vanilla extract

Zest of 1 Lemon

1 tbsp Lemon Juice

1 tbsp Honey

Topping

2/3 Pieces of Red Dragon Fruit Chips

Method:

 Base:

  1. Crush the biscuits in a bag or bowl until they are a fine powder & mix with the melted butter and salt.

  2. Spoon the base mix into a muffin tray. Note - We recommend using cupcake liners or a small piece of non-stick baking paper to line the muffin tin before spooning in the mixture. It makes getting the cheesecake out later much easier!

  3. Use the base of a cup or jar to compress the base inside the muffin tray, so there is roughly a 5mm biscuit base.

  4. OPTIONAL STEP – You can give the biscuit base a 5 minute bake in the oven (at 180°C) to firm the base. If you do bake the base – make sure to give it 5-10 minutes to cool down before applying the filling.

Filling:

    1. In a large mixing bowl beat all of the Filling ingredients together using an electric whisk. Beat for 2-4 minutes until all of the ingredients are incorporated and the mixture becomes smooth and begins to stiffen.

    2. Spoon the filling into the muffin tray and fill to the top.

    3. Put the muffin tray straight into the fridge for at least 3 hours to let the cheesecakes set. You can keep them in the fridge for 3-5 days, serving as they are needed.

  1. Topping:

    1. To serve – remove the cheesecakes from the muffin tray, either

      carefully using a knife around the edge of the cake, or using the cupcake liners.

    2. Place 1-2 pieces of Soul Fruit red Dragon Fruit Chips on the top of the mini cheesecake.

    3. Separately roughly crush red Dragon Fruit Chips into a powder and sprinkle it all over the top of the cheesecake and the plate. Feel free to get creative with this, but the bight coloured power transforms the ordinary cheesecake into a real showstopper!
