For 8 pancakes


  1. Cut the dragon fruit slices into small pieces using kitchen scissors.
  2. Mix all the dry ingredients together, then add the wet ingredients and the dragon fruit slices and mix. Let the batter sit for 5 minutes, to thicken.
  3. Add cooking spray to a pan and scoop out portions of the batter. Cook for 2-3 minutes, or until it starts bubbling. Flip and cook for another 2 minutes.
  4. Top with some Crunchy Dragon Fruit Chips and some vegan vanilla yogurt and serve.
