Ingredients
For 8 pancakes
- 1 bag Chewy Dragon Fruit Slices
- 150g all purpose flour
- 1 1/2 tsp baking powder
- 1/2 tsp baking soda
- 1 tsp cinnamon
- 1/2 tsp salt
- 2 tbsp sugar
- 200ml almond milk
- 2 tbsp of oil
- 1 bag Crunchy Dragon Fruit Chips
- Vegan vanilla yogurt
Instructions
- Cut the dragon fruit slices into small pieces using kitchen scissors.
- Mix all the dry ingredients together, then add the wet ingredients and the dragon fruit slices and mix. Let the batter sit for 5 minutes, to thicken.
- Add cooking spray to a pan and scoop out portions of the batter. Cook for 2-3 minutes, or until it starts bubbling. Flip and cook for another 2 minutes.
- Top with some Crunchy Dragon Fruit Chips and some vegan vanilla yogurt and serve.
