Can You Use Dried Fruit in Ice Creams?
You bet! Think chewy, flavourful bits of goodness that add a whole new level of deliciousness to your scoop. You can choose to give your dried fruit a quick soak in some juice or water to plump them up, and then mix them into your ice cream. It’s a super easy way to add some extra texture and colours and make your frozen treats even more exciting.
Ingredients
Makes 6 individual popsicles of each flavour
For the popsicles:
- 500g Greek yoghurt
- 80g golden syrup
- 1 tsp vanilla extract
For the toppings:
- 1 bag of crunchy dragon fruit crisps
- 1 bag of chewy dragon fruit slices
- 1 bag of crunchy mango crisps
- 1 bag of chewy mango slices
Instructions
- Whisk Greek yoghurt, golden syrup and vanilla together.
- Using a food processor, blend the freeze dried dragon fruit and mango crisps to powders.
- Cut the soft dried dragon fruit and mango slices in small pieces.
- Separate the yoghurt mix in two bowls. Add the dragon fruit powder in one and the mango powder in the other.
- Fill the popsicle moulds with the two frozen yoghurt mixes. Top with soft dried fruit pieces.
- Place in the freezer overnight, and enjoy on the next sunny day!
